My last post for this year is of course going to be a recipe for party food. You wouldn’t want to be in my kitchen at this time of year as it is a total mess! I have been making so much party food and frozen it that there is not even room in the freezer anymore. This year my new year’s party will be a proper feast, yay! I love parties! And you? Are you going to celebrate?
With these simple ricotta and spinach pastries which make super tasty finger food I am wishing everyone a fabulous new year, full of surprises.

- Cook Time : 25 minutes
- Yield : 6
Ingredients
- puff pastry sheet – 1
- fresh spinach leaves – 200 g – 7/8 cup
- ricotta cheese – 150 g – 2/3 cup
- grated cheese – 2 tbsp
- garlic clove – 1
- egg – 1
- olive oil
- salt and pepper
- milk – to brush
- sesame seeds – to sprinkle
Instructions
Make the filling. Stir fry the garlic clove with 2 tbsp of olive oil, add the washed spinach leaves, salt and pepper and cook uncovered for a couple of minutes until soft.
Add the ricotta cheese, the grated cheese, the egg, salt and pepper. Mix well.
Unroll the pastry sheet and cut it into 6 equal squares.
Place a generous spoonful of ricotta and spinach mixture in the middle of each square.
Fold the corners into the centre. Brush with the milk and sprinkle with sesame seeds on top.

Cook at 200C or 390F for about 15 to 20 minutes or until golden.
Serve warm or cold.

Had lots of food this year, probably more than last year and all homemade (a part from a pandoro which I bought). Had a great new year’s too and now we are waiting for Epiphany. I wish you a wonderful 2018 and maybe see you soon!
