Peach and yogurt cake with olive oil

Let me give you a good recipe that really tastes of summer.

Peaches and yogurt go heavenly together and if you swap butter for olive oil you get a much lighter but still very delicious cake.

I brought this at the beach as a snack for the children and it was a great treat for them. We are having so many big juicy peaches as well as melons and watermelon.. I just love to be spoilt for choice, there is so much beautiful fruit at this time of year.

  • Prep Time : 20 minutes
  • Cook Time : 35 minutes

Ingredients

  • self raising flour – 250 g – 2 + 1/2 cup
  • sugar – 120 g – 1/2 cup
  • olive oil – 80 ml – 2.7 fl oz
  • natural yogurt – 180 g – 3/4 cup
  • eggs – 3
  • peaches – 3 large
  • vanilla essence – 2 tsp

Instructions

Peel the peaches.

Slice one peach, put it in a processor with the yogurt and reduce it into a puree.

Add the sugar, the eggs, the vanilla, the oil and mix well. Dice the remaining peaches and add them to the mixture with the sifted flour. Mix well.

Pour the mixture onto a baking tray measuring approx 23 x 33 cm or 9 x 13 inch at 180C or 350F for about 35 minutes. It should look nice and golden but still be nice and moist inside. Check with a toothpick after 30 minutes.

Serve with a sprinkle of powdered sugar (optional).

  2. Mouthwatering and light cake and such a doddle to make, grazie Alida. I’ve also been tucking into beautiful peaches, watermelon and melon, they are so refreshing. Today I’ve bought a large bunch of gorgeous grapes which are now in season 🙂
