Super yummy icy mousse with berries and yogurt – 4 min prep!

Ladies and gentlemen let me introduce you to one of the quickest and freshest desserts ever: a cool yogurt and berries mousse quick to make and incredibly refreshing. Ingredients needed.. yogurt, frozen berries and honey or any other type of sweetener if you prefer (agave syrup, coconut sugar or caster sugar would do too).

I have used a mixture of frozen berries which can be quite sharp so I have added 2 generous tbsp of organic honey but if you are using strawberries, peaches or any other type of sweeter fruit than you might need less of it or nothing at all if you prefer! The fruit needs to be frozen.

I will be serving this to my next dinner party. It is summer time and after a heavy meal this will be just perfect.

I have taken inspiration for this from my favourite chef ever, Jamie Oliver!

  • Prep Time : 4 minutes
  • Yield : 4

Ingredients

  • fruit of the forest – 300 g – 3 cups + a few extra to decorate
  • natural yogurt – 300 g – 1 + 1/4 cup
  • honey – 2 tbsp
  • mint leaves – to decorate

Instructions

Put the berries, the yogurt and the honey in a processor (the yogurt needs to be in the same quantity as the berries.

Whiz and simply.. serve.. so easy!

Decorate with mint leaves and a few berries.
