To make a really delicious strawberry salad you need to slice the strawberries very thinly. I have learnt this long time ago from an Italian chef and since then I have always been making it like this.
Slicing them thinly improves their flavour and they will be juicier as well. I always like to add a teaspoon of vanilla essence and the juice of an orange. No sugar this time, just a spoonful of honey as strawberries are naturally sweet anyway. If you like you can add a drop of white wine too.
Needless to say that some lovely whipped cream or full fat natural yogurt will go heavenly with this but if you like to cut down on calories then just enjoy this salad as it is.. so delicious anyway.

Ingredients
- fresh strawberries – 500 g – 2 + 1/2 cup (measurement in cups for halved or sliced strawberries)
- honey – 1 tbsp
- vanilla essence – 1 tsp
- white wine (optional) – 25 ml – 0.8 fl oz
- orange – 1
- mint leaves – handful
Instructions
Wash the strawberries and slice them thinly, add the honey, the juice of the orange, the vanilla essence and a few torn mint leaves. Mix well. Also add the wine if you wish.
Let it rest in the fridge for an hour and serve with natural yogurt, vanilla ice cream or whipped cream.
As I like mint and I use it often in my cooking, I left it in a glass with water and after a couple of weeks the roots have began to sprout. I can now plant it in a pot.
Mint is a very easy plant to grow.
