Quick and easy olive bread recipe

Would you like a super simple and fast olive bread recipe? Something delicious and easy if you have friends coming around or just a tasty snack to grab when you feel a little peckish?

I served this olive bread for lunch with houmous, cheese, parma ham and fresh salad. It only took 20 minutes to prepare and it tasted fab as olives add so much flavour to bread.

I have added yogurt to the mixture which helps making the consistency quite moist and rich together with good quality olive oil.

If you are gluten intollerant you can still make this by using a self raising gluten free flour mix. Just remember to add a little bit more yogurt to the mixture.

  • Prep Time : 20 minutes
  • Cook Time : 35 minutes

Ingredients

  • self raising flour – 225 g – slightly less than 2 cups
  • natural yogurt – 170 ml – 6 fl oz
  • eggs (at room temperature) – 3
  • olive oil – 6 tbsp
  • black and white olives pitted – 150 g – 3/4 cup
  • salt and pepper – pinch

Instructions

In a bowl whisk the eggs until pale and creamy. Add the salt, the pepper, the olive oil, the yogurt and then the sifted flour.

Add the olives and mix well.

Pour into a standard size non-stick greased and floured loaf tin.

Cook for about 35 minutes at 180C or 350F. Check with a toothpick; Leave it in the oven a few minutes longer if it is still too moist inside.

Slice and enjoy!
