New potatoes always have that fresh, tender taste which remind you of spring and I love to think of spring on a chilly January day!
To feel alive on these cold dark winter days you can either book yourself on a holiday in the sunshine or you can nourish your body and soul with colourful, summery and healthy foods. Clearly I can only go for the second cheaper option right now as holidays are so far away on the horizon.
Tesco Cypriot New Potatoes from the sun-soaked island of Cyprus did just that for me. I rolled them in smoked bacon and popped them in the oven with lots of colourful vegetables and a generous drizzle of olive oil. “New potatoes in blankets” make a delicious side dish or an easy light meal too. Cypriot potatoes ‘Spunta’ variety have a really fresh and buttery taste infact they are very tasty indeed. I love the fact that you don’t have to peel them and just quickly wash them in cold water. New potatoes are often served boiled or steamed in salads but I have found that the rich, creamy soft and yellow coloured flesh of these Cyprus potatoes also serve well roasted.
Tesco Cypriot New Potatoes are available in Tesco stores in 750g packs or loose from now until the end of March.
My family loved this recipe, especially the children who are not always keen on potatoes so my thumbs up on this one.
This recipe serves 4.
- Prep Time : 20 minutes
- Cook Time : 35 minutes
Ingredients
- Cypriot new potatoes – 750 g – 3 + 3/8 cup
- smoked streaky bacon – 100 g – 1/2 cup
- fresh rosemary – 2 sprigs
- thyme – 2 sprigs
- salt and pepper
- extra virgin olive oil
Instructions
Wash the potatoes, put them in a sauce pan, cover them with cold water, add a pinch of salt and parboil for 5 minutes then drain.

Put the cooked potatoes in a dish, sprinkle them with olive oil and mix well.
Hold each rosemary and thyme sprig at its top and slide your fingers down it to strip off all the leaves. Chop them finely with a knife and roll each potato into the herbs.

Wrap a streak of bacon around each potato

Wash the vegetables, dry them with a towel and put them on a baking dish; drizzle them with olive oil, sprinkle them with salt and pepper and mix well. Arrange the potatoes on top and bake for 30 minutes at 200C or 390F.

Turn the potatoes halfway during cooking so they will roast evenly. Serve warm.

What an original and delicious idea, spuds in blankets, who would have thought it! I love the dish you made with an assortment of colourful vegetables and I can also use these potatoes alongside the Sunday roast. Alida saw you on Friday Night Feast last night, trying out those black pudding recipes and now this great video, bravissima!!
