Peppers with crunchy breadcrumbs – easy recipe

Hello my friends! I have a tasty recipe for you today.

Let’s make peppers super delicious. How? By adding breadcrumbs to them, a clove of garlic, herbs and olive oil.

Nothing too complicated and that’s how most recipes should be. These are the kind of recipes I always end up making over and over again.

I love peppers and I enjoy photographing them too. Their bright colours make them ideal subjects for still life photography which I am practising at the moment.

Ingredients

  • peppers of different colours – 4
  • breadcrumbs (not too – 300 g – 3 cups
  • garlic clove – 1
  • dried oregano or basil leaves
  • extra virgin olive oil
  • salt

Instructions

For this recipe I have used different types of peppers. I particularly love these long red peppers as they are so sweet.

Wash the peppers, remove seeds and filaments and cut them into strips.

In a pan heat up 3 tbsp of olive oil with a clove of garlic. Add the peppers, 1 tbsp of dried oregano or a few leaves of fresh basil, salt to taste and cook them until soft with the lid on for 20 minutes whilst stirring from time to time.

Remove the garlic clove, add the breadcrumbs, stir well and continue cooking them for a further few minutes until the breadcrumbs look nice and golden. Serve warm with an extra drizzle of olive oil if you wish.

  1. Peppers are beautiful, delicious and packed with vitamin C, what more can you ask for. I adore peppers cooked in this way, I’m going to try your recipe this week for sure. A generous measure so I can add to pasta or gnocchi the following day!
