Entertaining over the New Year? Make these super quick ham baskets and put anything you like inside them.
To make them all you need is Parma ham and a muffin tray then pop them in the oven for 15 minutes and it’s done!
You can put whatever you like inside them. On mine I put salad leaves (lamb’s ears is my favourite type of salad and it looks good too), a mozzarella cube and a little piece of tomato on each basket with a final drizzle of balsamic vinegar.
Alternative fillings could be rice, couscous and cheese or anything else you fancy.
This recipe makes 4 baskets.

- Prep Time : 10 minutes
- Cook Time : 15 minutes
Ingredients
- parma or san daniele ham – 8 slices
- mozzarella cheese
- salad leaves
- cherry tomatoes
- balsamic vinegar
Instructions
Put the ham slices into 4 muffin tins. When it cooks the ham usually shrinks so leave some overflowing from the tin.
Cook for 15 minutes at 200C or 400F.

Let the baskets cool down and fill them up with the salad leaves, a mozzarella cube, 1 cherry tomato and drizzle with balsamic vinegar.

I prefer parma or san daniele ham to the ordinary “cooked ham”. It is just so addictive with breadsticks. Happy new year to you too.

I am still going everyday to be with my mom at the rehab center. They said she will be there for about another 2-3 weeks depending on how she progresses. It is slow and she is still in pain. Hi Alida, I made these for a family gathering last night and served them as a starter on colourful lettuce leaves adding toasted pine nuts and finely grated parmesan and they were delicious! Everyone loved them and they looked so pretty. I followed with Romana chicken with peppers – I love to use all the herbs in the garden as they are so fresh at this time of the year. Dessert was rhubarb & ginger syllabub (light mascarpone, double cream, raw ginger, white wine, a bit of caster sugar, icing sugar and topped with stem ginger). I have so much rhubarb and it’s always good to use what you’ve got in your back garden. I will try the parma baskets using San Daniele next time. Hope you are all well and enjoying the sun (at last!). xxx

You are a great cook Sue and your guests must have gone home happy and full. I like the sound of that dessert with rhubarb. I don’t use ginger very often in cooking but I should, I often add it to tea, it helps especially if you have a cold.
