Zucchini Schiacciata Recipe, quick and delicious

Quick recipes are always my favourites and today I give you this one that’s rapidissima or super quick: “Schiacciata di zucchine” which is like a flat bread with zucchini (courgettes).

My version is plain but you can be creative and add whatever you fancy to it like onions, tomatoes or other vegetables and if you fancy something more substantial add some cheese too.

If you prefer a more crunchy and thin schiacciata instead of a soft one (like this one) you just need to use a larger baking tray.

  • Prep Time : 15 minutes
  • Cook Time : 35 minutes

Ingredients

  • zucchini (courgettes) – 2
  • water – 350 ml – 11.83 fl oz
  • flour – 200 g – 1 + ¾ cup
  • salt – 2 tsp
  • olive oil – 3 tbsp + extra to drizzle
  • parmesan cheese (optional) – 4 tbsp to sprinkle

Instructions

Wash and slice the zucchini as thin as possible. Use a mandolin if you have one.

In a bowl mix the flour with the water and the salt. Then add 3 tbsp of olive oil.

Add the sliced zucchini and mix well.

Pour the mixture on a well greased rectangle baking tray ( my tray was 35 x 27 cm – 13.7 x 10.6 inch). Drizzle the top with olive oil and sprinkle with Parmesan cheese (optional). Cook at 200C – 392 F for 30-35 minutes.

Serve warm.

  1. What an intriguing and simple way to make Zucchini Alida. It must be so delicious served this way. I may not even wait until it is zucchini season, which is far away around here. My next trip to the grocery store I will see if there are any good zucchini available because I can’t wait to try cooking it this way!

    Such a simple wonderful dish. With 4-5 ingredients, thats all it takes to create a scrumptious “Zucchini Schiacciata.” Love this, must be very tasty, especially with the cheese on top.   3. Wow, this sounds so wonderful, i am thinking this along with some Italian tomato sauce to put on top,i make my own sauce.

  4. i just made the zucchine schiacciata the only thing i don’t understand is the way you write the ingredients, like 350ml or 200g 1.9 cup it came good but i think i didn’t put enough water or flour can you tell me the other way to cook it like the over temp. is it 392f. thank you joann

      Sorry if this wasn’t clear. In my recipes I write the measurements following the metric and the American system. So 350ml stands for 350 milliliters and then I write the equivalent in fluid ounces or 11.83 fl oz.
      200g = 200 grams which is 1.9 cups.
      The oven temperature for this recipe is 392 Fahrenheit.
      I hope this is more clear 🙂
