Chocolate Salami with pistachios

Folks it is time for sweet temptations!

If I carry on eating like this I will have to stop blogging in order to lose weight or I will simply buy the next size up which will probably be my most likely option.

It is strange that during spring and summer I still cook and bake the same food and I always manage to lose weight. It really is winter you know.. and Christmas time seems to give us the green light to indulge and eat whatever we want.

And  talking about food I made the most of today and went out with my husband for lunch. We went to a tapas bar just across the road which is run by an Italian guy from Calabria.

The food was to die for: juicy prawns, tender squid, fresh marinated octopus, orgasmic aubergines parmigiana and just to stay on the light side the dessert was a  heavenly crema catalana and churros… deep fried sweet batter..breathtaking!

But you know what: I felt damn good all afternoon. The warming, super tasty and delicious food  had just reminded me of why I love to blog: I am a food worshiper!

So have this chocolate salami for you today; it looks like a real salami but it is made with chocolate, biscuits and nuts instead. A classic Italian sweet treat and it is easy to put together, this was my childhood favourite!

  • Prep Time : 20 minutes

Ingredients

  • unsweetened cocoa powder – 80 g – 2/3 cup
  • rich tea biscuits – 150 g – 0.31 oz
  • orange essence – 1 tbsp
  • shelled pistachios – 90 g – 3/4 cup
  • butter – 100 g – 0.44 cup
  • granulated sugar – 100 g – 1/2 cup
  • egg – 1
  • icing sugar – to decorate

Instructions

Prepare your ingredients; instead of orange extract you can flavour your salami with vanilla essence or alcohol if you prefer.

Leave the butter out of the fridge to soften. Chop the pistachios and the biscuits roughly. You can use a processor if you prefer.

Mix the softened butter with the egg, add the cocoa powder, the sugar, the orange essence.

Now add the crushed biscuits and pistachios.

Mix well then working with your hands, put the mixture on a sheet of baking paper and shape it into a log. If you feel that the mixture is dry and it doesn’t hold together very well add a little bit of milk which will help bind the ingredients.

Roll up tightly with the paper and then with tinfoil sealing the ends; put it in the fridge to set for at least four hours.

Remove the paper, roll your salami into icing sugar and if you fancy tie it up with string to look like a real salami. Slice and enjoy!

    How nice to have lunch with your husband and your lunch sounded really lovely. Wow, this really looks like a salami! When I first saw the photo I thought it was a real salami with chocolate, but now that I see your recipe, I want a piece, it looks amazing. What a wonderful treat and it was your childhood favorite. What wonderful flavor that must be and texture in your mouth when you have a piece. I love chocolate and pistachios so this sounds like a winner to me! Thanks for sharing this delicious biscuit.   2. It doesn’t matter what time of year it is Alida, I always manage to gain weight just looking at food!!! Even on my new “diet” I’ve managed to gain weight, lol…Just hearing about your fabulous food I’m sure I’ve gained weight, lol…

  3. This looks so yummy Alida and what a lovely idea for the Christmas table. I imaging it would be amazing served with a big scoop of vanilla ice cream…..
    As for putting on weight? It is definitely one of those hazards for food lovers. I have to constantly persuade myself that I shouldn’t just give in to weight-gain and that it is important to watch it carefully. Oh well….. it’s Christmas…. I can worry about it again in the New Year!!
