Caramelized Peaches with ice cream

Hello hello! The sun is shining out there and happiness is in the air. After indulging in a nice meal today I had the perfect summer dessert; I caramelized some peaches which needed eating up, added a bit of vanilla essence and almond flakes and matched them with vanilla ice cream; a dessert made in heaven!

I love the sweet caramel which forms on top of the peaches; it matches perfectly with the almonds and ice cream.

Give this a go and enjoy the gorgeous summer weather which has even arrived in the UK after a series of really bad summers. A treat at last!

  • Prep Time : 20 minutes
  • Cook Time : 25 minutes

Ingredients

  • peaches – 4
  • vanilla essence – 1 tbsp
  • brown sugar – 4 tbsp
  • toasted almond’s flakes – 3 tbsp
  • vanilla ice cream

Instructions

Heat the oven up at 200C under grill mode.

In a large baking tin put 3 tbsp of sugar, 3 tbsp of water and 1 tbsp of vanilla essence. Put it over a source of heat and melt the sugar stirring all the time

Cut the peaches into halves, remove the stone and put them over the baking tin with the cut side up

Sprinkle the peaches with brown sugar and grill them in the oven at 200C for about 20 minutes. When grilling leave the oven door slightly ajar

The sugar on top should caramelize and go a brownish colour;

Serve warm with vanilla ice cream and toasted almond flakes.
