“Mamma facciamo una torta!” Mummy let’s bake! How can you refuse if your little one wants to be involved in the kitchen?!
We all know that children learn to appreciate food from a young age and if you can put up with a bit of mess and have a little extra time on your hands it will be very educational and beneficial to them. After all they can learn very useful skills which will stay with them for life.
We made these very easy almond and orange cakes without using any butter or oil. The richness of the almonds and the aroma of the orange and lemon zest will be enough to give these muffins a very pleasant taste and an interesting texture. Using corn flour instead of ordinary flour will help to make them softer and delicate.
- Prep Time : 25 minutes
- Cook Time : 35 minutes
Ingredients
- sugar – 150 g
- eggs – 3
- corn flour – 80 g
- ground almonds – 120 g
- zest + juice of orange – 1
- amaretti biscuits – a few
- lemon rind – 1
- salt – a pinch
- icing sugar
Instructions
Preheat the oven at 160C.
Whip the eggs with the sugar until they get pale in colour

Grate the orange and lemon zest

Add the corn flour, the almonds and the orange juice. Stir all the ingredients in very well

Whisk the egg whites until firm with a pinch of salt

Gently fold the whites into the egg yolk mixture

Pour the mixture into 6 greased muffin molds (no need to grease if they are made of silicone)

Sprinkle some amaretti biscuits on top of each muffin and bake them for 30-35 minutes until golden

Finish them off with a little dusting of vanilla icing sugar

I love the fact that there is no oil in these muffins. I could eat a whole lot at one go without feeling bad 🙂

Dear Alida, This is absolutely adorable and brings back such good memories. My children used to stand on a stool to help at the counter.
