I made these bruschetta for a dinner party and they were a great success; they are easy to prepare and of great effect.
I like the combination of cherry tomatoes, olive oil, mussels and some good crunchy rustic bread
They make a great starter or you can serve them as an aperitiv as they will set your stomach for the food to come.
Serve them with a good glass of white wine like Pinot Grigio.
Ingredients
- mussels – 300 g
- garlic – 1 clove
- olive oil – 2 tbsp
- rustic bread
- salt and pepper
- cherry tomatoes – 75 g
- white wine – a drop
- chopped parsley – 2 tbsp
Instructions
Heat a pan with 1 tbsp of olive oil.
When hot add the mussels with the white wine and put the lid on. When they have all opened take them out of the shells and filter the juice they have released.
In a pan fry with 1 tbsp of olive oil the finely chopped garlic and add the tomatoes chopped into 4 halves.
Add the juices of the mussels and let it reduce for about 10 minutes. Add the mussels,chopped parsley, salt and freshly ground pepper;
Slice the baguette and toast it in the oven for a few minutes. Put some of the tomato mixture on every slice and the mussels on top.
Sprinkle some olive oil on top and serve it warm.

Very great idea, Alida. I was actually looking for a good idea of an appetizer, my question is, are they still very good when they get cold>? I suppose they should be served warm..
